It’s no secret that I love to bake, and Beckham loves to bake with me! This weekend we decided to wake up and make some banana bread for breakfast. Beckham was so excited when I told him we were going to cook something together! He doesn’t care if we are baking, making coffee, or chopping vegetables, he just loves to help in the kitchen! It’s the cutest thing! 

We made some Paleo chocolate chip banana bread using our 4th & Heart Ghee Butter, and it was delicious! All of us loved it! I mean, who doesn’t love banana bread?! I’ve never cooked with Ghee before, but I’ve always heard people rave about it! I’ve heard about people using it in their Bulletproof Coffee…I still want to try that! Have you ever tried it?! Ghee has tons of health benefits, and is easier to digest than butter because it doesn’t have lactose! I love that it stays soft when kept in the pantry, and it is so easy to cook with!

And then we had to wait! He hates this part!  Scotti wanted to come see what we were up to. Sweet girl!  The bread was absolutely delicious! I can’t wait to experiment with some other recipes using Ghee! It had a dark color from the coconut sugar. It didn’t taste like traditional banana bread, but it was so tasty! It was really sweet and tasted amazing with coffee!  Here is the recipe!

4 eggs

3 Bananas

1/2 cup coconut sugar

 1/3 cup ghee  melted

 1/3 cup coconut flour

 3 T arrowroot starch

 1 T cinnamon

 1/2 t baking soda

 1/4 t salt

1/2 c 72%  dark chocolate chips

Combine the eggs, bananas, coconut sugar, and ghee! Then add the remaining ingredients. Pour into a greased loaf pan and bake for 45 minutes at 350 degrees! It doesn’t get much easier than that!
